chocolate raspberry cookies

raspberry chocolate cookiesas you probably know by now i am a big fan of the chocolate raspberry combination. there are the just awesome chocolate raspberry brownies, the chocolate raspberry cake, the chocolate raspberry truffles or the chocolate raspberry tarte. a few weeks ago when i was visiting my parents at wonderful grundlsee for a few days of snowboarding, i of course wanted to bake them something. since i had to take a train for 4 hours (with surprisingly only 1 time changing trains), i had to be something easy to transport. so these chocolate raspberry cookies were just perfect. i saw the recipe in “lecker” and immediately had to put it on my “to-bake” list.

i was a bit surprised by the texture of the cookies, which reminded me more of cake. the cookies were rather soft and not dense and chewy like you would expect from cookies. none the less they were pretty good.

since the raspberries are only thawed a bit, work quickly when folding them into the dough, otherwise the dough will be too firm, because the raspberries cool it down quite a bit.

ingredients (about 30 pieces)

  • 125 g frozen raspberries
  • 100 g chocolate
  • 125 g soft butter
  • 170 g brown sugar
  • 1 egg
  • 1 tea spoon liquid vanilla aroma
  • 200 g flour
  • 1/2 tea spoon baking powder
  • 4 tbsp (about 30 g) cocoa
  • 1/2 tea spoon baking soda

pre-heat oven to 175° line 2 baking trays with baking paper. thaw raspberries

finely chop chocolate. with a handheld mixer beat butter, sugar, egg and vanilla aroma until creamy. mix flour, baking powder, cocoa and baking soda and fold into dough in several portions. dough raspberry chocolate cookies first add in chopped chocolate, then raspberries (work quickly, so you can still get the raspberries folded in, before the dough firms up too much due to the cold. otherwise knead in briefly).

place dough with a table spoon 5 cm apart on the baking trays and flatten a bit. bake cookies one tray at a time in hot oven for 8-10 min. raspberry chocolate cookies cooling downremove from oven and let cool down on a cooling rack.
