strawberry season is finally here and you find the small red fruits everywhere. so far i haven’t gotten any that come close to my childhood memories, i actually haven’t in years, but the still taste great 🙂 mostly i eat them just as they are, with a vanilla creme fraiche, puréed (for me they taste more intense that way) or as strawberry ice cream. for more strawberry recipes look here.
but somehow i craved something new, so i was delighted when i got the inspiration to this strawberry chocolate oreo tarte on instagram. one can never go wrong with chocolate, oreos are amazing and everything together makes for a very tasty, if very heavy, tarte. i based it on my chocolate raspberry tarte.
ingredients
- 230 g oreos
- 110 g butter, molten + 60 g butter
- 550 g chocolate
- 400 g strawberries
- some lemon juice
- 200 ml heavy cream
- 40 g sugar
- strawberries for decoration
for the crust place oreos in a food processor and mix into fine crumbs and mix with melted butter. place the mixture into a springform or tarteform with a removeable bottom (you can also use single portions using forms from eg gü). with a big spoon or the bottom of a glass press firmly into the form and make an edge. put in fridge for 40 min.
in the meantime prepare the ganache. puree the strawberries with lemon juice and sugar, strain through a sieve. finely chop the chocolate, place into a bowl. heat the cream and pour over the chocolate, let sit for 2-3 min and then thoroughly mix. the chocolate should melt completely (but don’t worry if some pieces are left, they will melt once you add the strawberries).
heat 2/3 of the puréed strawberries in a small pot, melt butter in it. while still warm add to chocolate mixture and fold in. mix in rest of strawberry purée. pour the ganache on the oreo crust and put in fridge for at least 2 hours, best over night.
